Well you would want to take cuttings early in the season. That's when they are actively putting on green growth. Get yourself a good book for your region for ID on the plants. I use this one as I am in NY.

For "What's this plant" questions, Me :). Well, really my wife. She can usually give a general ID from a photo. /r/whatsthisplant is helpful too
Also keeping an eye on the NB observations on iNaturalist is a great way to start learning what starts flowering when, and what they look like. The plant IDs are usually pretty accurate, and you can set up daily e-mail notifications for new observations.
If you're near Saint John, the Saint John Naturalist Club has frequent outings. Membership is $20 and their next botany walk is Aug. 11
Finally, UNB Fredericton does a 1-week flora field course near the end of August.
