Depends, what are you guys into? I mean, your question is too broad. The only question that you have which is specific is "where do y'all suggest we stay?" If you stay in the French Quarter, all the places are very old so they lack modern amenities such as a gym with lots of equipment, an elevator, central air (they usually have hang on the window units). However, if you stay out of the French Quarter, then parking will be bad. You don't want to drive from your hotel to the French Quarter because parking is expensive and a pain in the butt. However, if you live on the edge of the French Quarter, you can live in a hotel with central air, a big gym, and plenty of elevators. Since it is on the edge, everything in the French Quarter is still walkable. My fave hotels on the edge of the French Quarter are the Ritz Carlton if you want to splurge and the Mariott next door if you are on a budget.

Space is kinda tight for a wheelchair inside Cafe du Monde. If you don't feel like standing in line for Cafe du Monde and you want to go someplace with more wheelchair space, then I suggest the beignets and coffee at the Ritz. The Ritz-Carlton has beignets and coffee that is better than Cafe du Monde and without the lines. It will cost you a couple bucks more, though.
If you like art, then the antique art galleries on Royal Street are worth a gander. The pick of the litter is MS Rau. All these antique art galleries are basically free museums.
As for the fancy dinner, I suggest K-Pauls.

Go during the weekend to meet people your own age. If you go during the weekday, it will be all old people who are retired. Are you a guy or a girl? if you are a straight guy, it is best to meet girls in person rather than online unless you are an Adonis. If you meet them in person, you'll have a chance to charm them with your witty banter and compliments. If you are online as in Tinder, then the only thing the girl will see is your pic. Clubs are poor places to meet girls as they are noisy so you can't talk to them. Try French Truck Coffee instead. There are several locations around town. Oceana Grill is open for brunch. Check to see if the other recommendations are open for brunch. Others' recommendations may be good restaurants but they might not be open for brunch. There's plenty of dive bars in NOLA, BUT there's only ONE HAUNTED DIVE BAR: Lafitte's. Lafitte's is the oldest bar in America (yes, I know that there's another bar that has been operating continuously longer, but Lafitte's is the oldest building that is a bar now). The bathroom is HAUNTED. It is very dark and someone/something is always trying to tug your lizard while you are trying to do your bidness!!! It is a fun piano bar and it's a real dive. Their "signature drink" is grape flavored kool aid with everclear in it.

There are a lot of antique stores with significant historical items on Royal St. These are basically free museums. The best free museum is MS Rau on Royal and Saint Peter St. They have a secret gallery of million dollar art. They don't allow the riff raff in their secret gallery. You have to be invited. Have some friends pretend to be your bodyguards and servants. Dress in T-shirt and jeans but have your "servants" dress in suits & ties. Then, you will be invited in to view Monets, Manets, Norman Rockwells and the Pope's diamond cross with a $2 million price tag!
9th Ward... why?! If you do, bring your guns. Yes, I did say plural guns. I recommend against it: nothing to see.
Beignets at the Ritz Carlton is better than Cafe du Monde. No lines, either. A bit more expensive, though.
Food, if you like oysters, crawfish & gumbo; Acme, Mr. Ed's, and Oceana.
Tap water? Why?! Stick with alcohol. You're in New Orleans!
