Here is my favorite guide for grilling bone-in skin-on chicken thighs (author is a little salty...), which has become my standard method on my Weber kettle. They have received rave reviews from my family regardless of what sort of sauce I've gone with. I have recently acquired a Masterbuilt Gravity 800, though, so I'm looking forward to adapting it. I'm afraid with the quick startup, my timing will be thrown off, so I'll need to do some "advance prep work" to make sure my "timing fluid levels" are correct before firing up the grill!

BBQ Pit Boys Smoker Box (I'll apologize ahead of time, as these seem to have gone permanently out of stock everywhere immediately after I bought mine) - The Weber Kettle makes a dandy smoker, so you didn't really make an 'either/or' choice!
Vortex (nothing makes better wings)
And, of course, any decent chimney starter (lighter fluid: BAD!)
