Uv resins are relatively new and not super well researched for long term effects. The consensus thus far is when fully cured it isn't bad because it can't get in your body. Therefore it is not food safe and you don't want to be inhaling resin dust if you are sanding things. After being printed the resin is sealed in so you really aren't even coming into contact with it so kind of a non issue at that point.
Before curing it is, as you probably know, very bad for you.
