Both books are by the same authors and they focus on cooking vegan food in one pot (easier and less washing up/ fewer steps. The other book has vegan recipes that are usually only around 5 ingredients (assuming you have basic things like salt, pepper etc.) both books are REALLY good. My mum was vegan and had MS, before she died and when she was more able she cooked a lot but struggled with multiple steps, having to use multiple things. These two books have some really yummy and easy recipes that aren’t trying to be crazy fancy but really get the job done and are incredibly tasty. They also have an Instagram page (don’t know if you have Instagram) but they put a lot of recipes for free on there.
She found easiest way to be healthy, is have fruit / oats nuts during the day for breakfast. She used to cheat and use easy oats and cut up a banana, blueberries and microwave with some flaxseed. Really filling, really healthy. Then for lunch She would have something salad related with pre prepared tofu you can sometimes buy tofu chunks already seasoned and so all you have to do is fry it).
The easiest meal prep thing is making curries and soups and then freezing them. There are some lovely curries in those recipe books. I usually try and add some more veg to them and freeze them in meal sized portions in the freezer. So I end up not having to cook as much!
I thoroughly recommend those books though and their instagram account I believe they are about to bring out an app too in the next few months. But all their recipes are suuuper simple and they really focus on making vegan food easy to prepare!
