The Openwheeler II on Amazon is another option as long as you don't have a DD wheelbase. You can basically fold the seat down all the way and separate the pedal deck and wheel deck from the seat and store it away in a couple minutes, I did that every week for like two years before I finally upgraded to an aluminum profile rig.
Yeah it's tough to imagine the wife is gonna be ok with a sim rig taking up that much space, but this was what I used for my first rig, it breaks down and stores away within a couple minutes, I did this each time I was done, this is another option to consider. It's obviously not as stable as a profile rig, but much better than using a desk setup.
If you are looking for a dedicated sim/ gaming chair and you are willing to spend as much as a new game console (and most likely even more) I absolutely recommend Openwheeler GEN3 racing chair on Amazon . You have to buy extra parts to set up HOTAS but the base pedal mount works just fine for rudders. They sell all kinds of optional parts to customize your setup and the build quality is great

I suggest playing your G29 in whatever you play and determine whether you want to upgrade in the future. If you do, just go all out on the rig in one go.
If you want to stay with a G29, this should work well. Was going to buy this before going the $5k rig route.

I got this chair in my first setup. You can fold it to save space. It's one of the cheaper options but has been very solid for me. Looking to upgrade this setup eventually for a more closed cockpit.
Since, the CSL DD isn't a real beast like the more expensive ones, you should be able to use it on any cockpit that works with Thrustmasters. As the TS-PC for instance, is actually more powerful than the stock CSL-DD. (Without the 8nm PSU)

I'm about to get one of these whenever the folks at FedEx feel like doing their jobs and I'm so excited to get Odyssey when it releases. Even if the on-foot stuff in VR is gonna be kinda weird, it's still gonna be a better looking game overall. Can't wait for that.

He has it hooked up to his PC for the Vive (Asseto Corsa, Project Cars, Dirt Rally) but that part's not important. As far as simulating racing in VR, I've found his setup VERY compelling. It's pretty awesome actually. There are plenty of adjustments, but once you get it set it feels amazing, and as long as you take the time to get your view to match in VR, it should provide great presence. There wasn't anything about the chair, wheel, pedals, shifter etc. that I found lacking at all. I actually thought having a seat belt for it would have been cool. :o)

The base unit also supports a steering wheel/pedals if you go beyond flight configuration as well. So far it's been stable and works well with VR, but it's a recent purchase and I'm still trying to dial-in all of the position settings and cable management.
This is painted metal and you do not want this directly on hardwood/laminat/vinyl flooring. I used an amazon basics puzzle map to work as an intermediary that added slightly more height adjustment to figure out good angles for seat vs pedals.

Here's what I have:
Logitech G27 (Newegg link - non-Newegg seller) (I picked mine up at Newegg for $255 in Oct 2011) -- I can't find any new ones that aren't pushing $500+ and the G920 nor the G29 are really great replacements IMO.
OpenWheeler Racing Seat & Frame (Amazon link) (I actually got this free because of saved up credit card points) -- Regularly going for $370-$400
In the actual hardware (not including PC, tablet/phone for PowerGrid or Steam Link/TV), I've only invested ~$260 in this setup. I was unaware that the G27 was discontinued and I'm not even sure what I would replace it with. If you can find one used in decent shape I would highly recommend it though.
As for the seat, I do like how comfortable it is, the backrest moves back and forward like a normal car seat and the base slides forwards and backwards as well. My biggest gripe with it (and not sure if it's changed, but it doesn't appear that it has, the adjustment for the shifter is seriously lacking. I'd like for it to be able to move higher as well as further back, it's really in an awkward position when compared to my actual car, but you do get used to it for the most part. I also wish that the wheel had a "quick release" feature to move it up and down, also like most car adjustable steering wheels, but it doesn't, it's controlled by the tightness of the bolt that keeps it from moving. I haven't found a sweet spot for it to be loose enough to move it out of the way to get in and out while still managing to be tight enough to not move during more intense gaming sessions (I like to turn the force feedback nearly all the way up).
All in all though, it's really a great setup, the hardware may not be the best available, but it's very good and stands on its own without questions.
I had the same problem, I had to put my rig away after each use, and believe it or not, I was able to break down my aluminum frame rig and put it in the closet within a few minutes, basically I would detach the entire wheel upright and the seat subframe from the rectangular base, so it would be in 3 pieces. I would fold the seat forward and store all the parts in the closet, its not very hard, and well worth the difference. I didn't realize how much FFB detail I was missing until I went from this to this. Anything is possible if you plan it right. I even stuck felt pads on the 3 broken-down sections so they slid across the hardwood floor and into the closet super easily.
Hey I figured i'd just mention the two that I've had and my thoughts on them if you wanted to shop around or anyone else is reading up on rigs:
Openwheeler: I did like it, however I had gen1 and it was only $360. It looks like with Gen3 however they made everything more stable. The cockpit is great and fully adjustable. Only annoyance was the bar in between your legs, I ended up hating it after 4 years and when I started to get more serious into iRacing.
Then I moved to a Trak Racer TR80 2 months ago which is absolutely incredible. Fully stable as NOTHING moves when driving. Your suggestions in your post mention some cheaper ones but I wanted to throw this in there in case you were willing to spend a bit more for the long run. After this rig you will have to get a chair as well to put on it, which I found on Amazon instead since Trak Racer's shipping for chairs was RIDICULOUS. Chair. I will say though the TR80 is a bit annoying to adjust but I don't think it's made to adjust often hence why it's so stable.

Looking it up, it looks like the reckhorns are approximately 6 inches (158mm) in diameter. I just measured my Auras (not available in the US anymore, either) and they measure at 6 inches, but that includes the heatsink fins. The actual actuator is closer to 3.5 inches, so I'm guessing that they may work fine. It looks as if heat dissipation is dealt with, so all you can do, at this point, is try it and find out!
I don't like the mounting, tho. Both the Auras and the Buttkickers have solid frames that you can bolt to any surface, these don't and require that you get the flat part bolted firmly to a flat surface or you will lose a lot of effect.
If this is your frame, mounting will be interesting! My recommendation would be to mount it to the frame to start. My chair also sits on runners and I mount mine to the frame, not the chair. You can always drill those holes if you feel the need later.

Honestly I think you'd be better off getting one of the steering wheel and pedal units, more specifically one with steering wheel with paddles (could be used as high/low for older games) clutch, brake, gas pedals (would work for all games), and then one with the gear shifter (would work for more modern/complex driving games). The idea of making your own is awesome, but if you're going to go out of your way to make a racing cabinet you might as well make it for as many games as possible.
