Another option to consider is a DSI display, which is a really good choice for Zynthian. You can get them as small as 3.5" with capacitive touch for less than $50. They use the DSI connector on the board and leave the GPIO open for anything.
On the ones I have, you can mount the Pi directly to the display and only have the single cable running to the display for video and touch. As far as the Pi is concerned, they act just like the official 7" touchscreen with the same resolution at 800x400.

If you've got the non-touchscreen version of the Hyperpixel then those two GPIOs should be spare. The stock Hyperpixel installer script tries to configure it anyway though so you'd need to edit the device tree overlay for the screen to free up those two pins. YMMV as I've not actually tried this.

That screen is a compatible clone of the official Pi touchscreen so uses the dedicated DSI connector on the Pi board. It has the same weird 800x480 resolution for all sizes because it has to follow the official Pi touchscreen resolution since it is trying to pretend to be one. If you need the GPIOs then this should be a good alternative instead of the Hyperpixel 4.
It looks to be C++, so the same as Arduino, but a much more complicated program running on different hardware.
To edit it, you really just need a text editor, although I'd recommend using Visual Studio Code, which is free. Tutorials for C++ are everywhere, just do some searches and you should find plenty of info. Maybe even consider getting a good C++ book?
For portable screens, look at the Osoyoo DSI displays on Amazon. They come in 3.5", 5" and 7" and use the Pi's DSI display connector instead of using HDMI or connecting to the GPIO header.
Personally, I like the Osoyoo 3.5" capacitive touchscreen that I bought off Amazon. I bought one of the resistive touchscreens that requires the stylus for an Arduino project and hated it
Uses the DSI connector for touch, display and power, so there's only one cable, doesn't require any drivers and is 800x480. The screen is great, but I haven't found a case for it, though.

Made the mount. The screen I grabbed from Amazon. Pretty nice little screen. Just plugged in the ribbon cable and it worked.

It plugs into the Display connector on the board, just like the official 7" display.
I have a 3.5" MIPI-DSI display w/capacitive touch, it's pretty good. Same resolution as the official 7" display (800x480). Doesn't require a driver, either.
I just bought one off of Amazon that's DSI (like the offical Pi touchscreen), so it plugs into the display connector with one ribbon cable and not HDMI + USB, plus it's capacitive touch, not resistive like the display OP has.
3.5" 800x480 and about $30.
