I tried several different products upon my return to skiing, and for me there was one clear winner.
Arc'Teryx Phase AR Neck Gaiter - Too thin, and wetted out very quickly. It's fine for spring skiing, or other active winter sports, but I did not find it acceptable for skiing. This is more of a runner's than a skier's neck gaiter.
Outdoor Research Duoclava - I was excited to try this product as a solution to the negative of a balclava, the inability to pull it down, but whoever dimensioned this thing needs to be smacked. Even with the largest model, the cap was still way too small for my head. I also disliked the way the lower portion lay on my temples with goggles. It did stay breathable when warm and wet, so it at least had that going for it.
Phunkshun Double Layer Neck Tube - Winner winner chicken dinner. The DWR treated outer layer made it so generally the only moisture buildup was from my own breath. Comfortable, sits on the face well, and comes in a ton of different styles (I'm a sucker for herringbone). Very happy with this product. The only negative is that when it gets well and truly soaked, say in heavy PNW rain, it becomes quite difficult to breathe through. Thing is, by the time it got that soaked, it was so nasty outside I didn't want to ski anymore regardless. We're talking wringing a cup of water out of your gloves soaked.
I have a minimum of 5 ski days with each of these products. I am a bearded male with a big head. YMMV
