I use Pacsafe’s to secure my bag. Basically a steel mesh that I secure to a hard point such as the car seat steel points behind a seat. Would be a lot of work to get through it: PacSafe Backpack Protector
Backpackers use them to secure their bags when traveling.

I've heard amazing things about these wire bag locks if you have a backpacking bag. You can weave the lock around something solid and no one is opening nor taking it.

I'm not suggesting that specific model; the link is just to illustrate.
You can buy a wire mesh to put your stuff in that will lock shut. This way if there is no locker, you can lock the mesh with your stuff in it to a bed or something very solid.
Day pack is a great idea - there are some really nice ones that drape over the front of your chest.
You can also get a nice lock that works with a combo - try to get one that uses a lot of digits to deter easy access. I've also seen a lock that uses a magnetic bar - VERY hard to pick.
I fail to see the anti-theft. Just more pockets to steal from.
