Get Painting In Acrylics: The Indispensable Guide by Lorena Kloosterboer. Not only will it give you a good foundation in the medium and all its possibilities, as well as a good grounding in color theory, there is a very large section on realist painting strategies and specific techniques to achieve realistic results. Kloosterboer is a photorealist painter, as are most of the artists she chooses to highlight in the book. I really think this one is up your alley.

Two books that go hand in hand for acrylics are Painting In Acrylic: the Indispensable Guide by Lorena Kloosterboer and Acrylic Painting Mediums and Methods by Rheni Tauchid. The first is a great overview of the medium and painting in general from color theory to prepping canvas to acrylic techniques and mediums. The second one expands on the use of mediums to cover really creative and multi-media applications.
This comment of mine lists a bunch of general painting books - a couple specific to acrylic - that I’ve found most helpful for how I work. I have tons more, but I’m kind of a junkie, haha. A good book will have at least one tip you can carry with you...and you can find them cheap used!
For YouTube, my favorite painter to watch is Peter Wood (channel: peterwoodarts). He has thousands of videos, most of them painting demos. The audio is never great but the man does amazing acrylic work in a very high impressionist style, with modern influences.
A trio of pastelists. Painting Lessons With Marla is my favorite, I just love her very loose style and approach to color. Alain Picard has a similar painterly style, and Karen Margulis is very good, too. All three channels have great demos.
Streamline Art Video sells extensive and expensive DVDs on painting by masters. Their YouTube channel has been showing segments from them during COVID lockdown, and most of them are good, even if incomplete on the free channel. They almost always end with a time-lapse of the entire demo, too, which is awesome.
Other painting channels I like include Samuel Earp Artist, Jessica Henry, Graeme Stevenson (Color in your life - interviews and demos with artists in various mediums), Lena Rivo, chamberlainpaintings, James Gurney, habowskistudio, and Andrew Tischler. Again, lots of oil painters, but the lessons are applicable across media.
