Skype as an application is very robust and stable/reliable.
If you are experiencing lots of glitching as you describe, I would question the reliability/quality of the Internet connectivity first & foremost.
Get off of WiFi and plug in a cable for the interview.
I also very much suggest you use a headset of some kind as the speakers & microphone in most laptops are not very good, or are too sensitive & don't filter out background noise.
The H390 is great. Its what we issue at work, for people who want a headset for web meetings. So maybe ~2,000 people have used the H390 without issue in the company. No complaints on audio of mic - it has been our standard for at least 3years. Its been around a while as well (since 2007 according to google).

This one looks to have been discontinued - but is still for sale on Amazon for ~$40USD. Sounds quality is excellent (much better than h390). Mic quality is roughly the same.
Can someone ELI5 me the problem with cheaper models, I have something like this one
and it's "good enough". The price difference is not negligible so what is the consumer added value of headsets in this price range ?

In all cases, assuming that you'll be using speech to text for >2 days and using it as a full replacement during that time, I strongly recommend getting a noise cancelling headset microphone. You don't need to get a super expensive one. The 2 priorities are:
