My only exposure to a Paleo diet was pretty much that, and it worked for me.
I got this book and followed a 30 day meal plan. It basically just cuts out a crap ton of sugars and foods that potentially make you bloaty/retain water. I lost a lot of water weight right away (like 8 lbs in two weeks). Then I lost a total of like 30 lbs over three months with no portion control and no exercise.
I learned really quickly that drinking sugary drinks gives me a gnarly headache the next day. So does eating bread, and bread has the added effect of making me feel really bloated and sick to my stomach.
I guess my point is that people have this idea that the paleo diet is super militant and borderline irrational. It's as strict as you need it to be--anyone learning about paleo will learn about food quality and fodmaps and intolerances, etc. But if you don't have a lot of health issues or sensitivities necessitating restrictions, the diet can be pretty flexible.
A fun fact: Pork is the most difficult food to digest, so I have had to stop eating pork all together. Paleo is okay, it is just really difficult to live by. If you do decide to try paleo, I recommend the book Practical Paleo. It has 30 day meal plans for people with gut problems and has a lot of good information.
I've gotten a lot of use out of Practical Paleo. I've even gotten an extra copy to lend out since it has a great, easy to understand section about nutrition in the front.
Edit: And the recipes are usually really easy.

It also has quite a few 30-day meal plans customized to certain goals, as well as lists of different kinds of "paleo" but still potentially irritating foods, what to look for when shopping, guides to how to eat out... There's lots of great info in here, and I learned quite a bit.
