I do this, & got you covered. You're going to need 8+ inches of height and 10+ inches of width, which will be a 12 or more qt. stockpot. I regularly do pints and under in this 12qt pot & rack and it works great. It's a Tramontina 12 qt. stock pot combined with a Prepworks canning rack. IMHO; The two pieces work great together and fit 7 pints per batch.
One thing you've got to watch out for is that stock pots are often dimensioned by manufacturers as; Width = distance from handle to handle. Height= from bottom to top of lid handle, So the usable interior will be much smaller than the listed overall size. My 12qt. stock pot has a usable interior width of about 10 1/4 inches and an interior height of about 8 7/8 inches, it's still more than enough to cover a full load of pint jars.
There are very likely cheaper pots than the one I got but I saw it as a once in a lifetime purchase and wanted all the versatility I could get. The quality construction, tri-ply bottom, and compatibility with any cook surface made it worth the cost to me.
