I would suggest purchasing one of the following textbooks: Programmable Microcontrollers with Applications: MSP430 LaunchPad with CCS and Grace - $25 used
or
MSP430 Microcontroller Basics - $30 used

Both books cover mostly the same topics, I have more sticky notes in the latter but I like the layout of the former much more.

Did you happen to buy the capacitive touch sensor as well? There are some really fun projects that can be done with that.

Make sure you check out the User's Guide and see if you can't come up with any projects yourself.

There's also the Quick Reference - which will become useful for whatever project you decide on.

And then there is this document which is basically a textbook with sample code that explains how certain aspects of the device work.
