Hard to know for sure how much you can save without knowing the exact consumption of your current server. Do you have any wattage measuring tool like a kill-a-watt?

APs and routers interoperate on open standards, so you can technically pair any router with any type of AP. That said, I'd get a router with similar out-of-the-box feature depth as your UniFi APs (VLANs, etc.), such as an EdgeRouter, Mikrotik or an x86 box running an open-source distro (example: a Qotom running Untangle Home). I'd avoid the UniFi gateways, as the USG's are long in the tooth and underpowered for CPU-based throughput; also avoid the Dream Machine platform, as it seems they still haven't been able to stabilize it.

First, go Motorola MB8611 for your modem, no brainer.
Beyond that, for full multi-gig all the way to the endpoint, IMHO it's excessive expense just for an extra couple/few hundred Mb/s of total utilization, which you likely won't be able to see for many, if any, of your wifi clients, and only a small number of wired clients. For now, I would just settle for gigabit WAN, LAN w/ 10Gb uplinks for faster local NAS/server transfers, and Wifi 5 or 6 APs on gigabit backhaul. The performance difference, overall for the money, will be a way better ROI.
If you go Aruba Instant On for LAN + WLAN, I'd dp a low-power x86 box (example) with whatever distro on it (pfSense, Untangle, OpenWRT, RouterOS, etc.), then a 1930-24G-PoE-SFP+ (JL683A) switch and X# of AP__ access points.
For a single-vendor stack with its own gateway, go Cisco Business: RV340 router, CBS-250-24P-4X switch (fanless!) and however many CBW240AC, 140AC or 145AC access points.
If you did want to start to trickle down multi-gig, I'd work from the WAN inwards, so from the 2.5GbE modem port, I'd run a Mikrotik S+RJ10 multi-speed transceiver in a compatible gateway with at least 2 SFP+ ports, such as a Mikrotik CCR2004, so you can pass 10Gb to the switch. At that point, you'd at least be able to pass multi-gig from the LAN as a whole up/down to the internet. For multi-gig to any single client, you'd have your 10Gb SFP+/copper wired ports. To do it via wifi, as I said, you'll need multi-gig switching and Wifi 6 APs, plus 3x3+ AC clients or 2x2+ AX clients in close/clean airspace -- other than using a hodgepodge of repurposed consumer gear, the AP/switching piece is where things will get spendy, for diminishing ROI, at least for right now.
