I've never encountered a bad Logitech mouse, and I've owned several over the past decade. It's ok to acknowledge that Apple's mice are horribly designed. Nobody will hurt you. I tried to use them for many years, but once I broke down and picked up a Logitech G5, I never looked back. These days I'm using a Razer Deathadder. Say what you will about the rest of their products, but I've never found a more perfect mouse for my hand shape.

This is what I use, though it may not be the best it's worked for me. I accidentally broke my last one and got a different mouse and it was a great deal less comfortable. This has been the best mouse I have used though, and feels very ergonomic to me. You might want to look around a bit, otherwise I'd recommend going with that.

I don't have a ton of advice for most of the build, but I have a few thoughts.
I would recommend the 1070 over the 980 Ti. The benefits in VR that come along with the 1000 series are probably worth the wait for Hackintosh support.
ROCCAT seems like a bit of a strange choice for the mouse (you can get a DeathAdder Chroma for a very similar price), however I don't know a ton about gaming mice, so take this with a grain of salt.

Razer products have been great for me outside of the Naga Epic. That mouse was a POS but the Naga Epic Chroma has been great. If anything no other manufactuer makes the variety of products Razer does which keeps me with them.
I have rather small hands and I absolutely love my Razer DeathAdder! It is definitely worth a look. I didn't get the term 'eSports' at first, turns out it's what being marketed even on Amazon.
There are several iterations of Deathadder. They are usually classified as (old) Deathadder 3 & 3.5G, Deathadder 2013/4G, Deathadder chroma and Deathadder Elite.
The eSports essential DA looks like the DA 2013 since both are advertised as having a 6400 dpi 4G sensor as known as PMW 3988. The Esports DA should be the Deathadder Elite. It has the PMW 3389, which is a variant of the most recent optical sensor, the PMW 3360. Razer also added a pair of CPI buttons on the top of the shell. Some reported that the coating was also improved on the DA Elite.
For your information, the DA Chroma has the PMW3989 sensor which is also very much enough for intense gaming.
The biggest drawback of the DA Elite in comparison to its former iterations is the lack of adequate onboard memory. You can't store personal cpi settings on it while it's viable on both the DA Chroma and DA 2013. That said, your settings are only tuned and saved through Razer Synapse, a software that is kind of notorious for buggy. You also have to keep it running all the time.
I didn't have any bad experience with both their hardware and software though.

What price range are we talking?
If you have some money to spare, I would recommend Razer gear. It's some of the best out there.
The Razer DeathAdder costs 50$ and is probably the world's most popular gaming mouse.
The Razer BlackWidow costs 70$ and has mechanical keys. I love this because you have a noticable "click" when pressing in the keys which makes more very dynamic and precise gameplay.
In addition to this, you need a mousepad. It doesn't have to be a good/expensive brand, but make sure it's LARGE. It recently bought a huge mousepad and it is sooo nice being able to play without being scared to roll over the edge. Lower DPS improves your aim, so you may have to move around your mouse a lot from time to time. This is a gamechanger.
If you don't have 120$+ to spare on equipment, just go on Amazon and search for "gaming mouse / gaming keyboard". Most results will be very affordable and still cheap.
For example, I am currently using this gaming mouse for only 14$. It's perfectly fine in my opinion and quite nice.

2: From what I know of computers, not much. Laptops aren't the best thing to be playing CS on. Everyone will say that. Even Globals in Rank-S who won MLG KatowiceHack Open One Winter Colonge 2018.
3: I would assume? Again I have no clue. These are mostly computer questions you should google rather than asking for advice on a CSGO forum.
4: ??? I don't think there is a way to make the console show only the damage you dealt after death. Unless you are throwing a nade I don't think that is possible.
5: It's like matchmaking but better. With better players who are way above the skill level of GN3. I haven't even started ESEA and i'm DMG. You should probably only start when you get better.
ESEA is not free, however you are right. It seems they took the cost off of the front page. I believe normal was $7 a month last time I checked and premium was $15? But if you want to find out for sure, you can create an account like they seem to want you to to find out.
6: Personally, I use a Logitec G502 and have very few complaints. However right now that is around $70 so its a bit out of your price range. I found the Razer DeathAdder Croma for $54 with a quick google search, and the reviews for it seem good, but I can't speak personally about it. It (kinda) has a similar shape to the one you had before.
7: You need one that clicks for lack of a better word. Infinately spinning mousewheels don't work as a measure has been put in place to stop you from achiving Bhop by simply just mashing the space key and the same effect applies here. With a little practice with the mousewheel, you wont be super consistent like on say a Bhop map, but you can land 3 or 4 Bhops consistently.

Hell, when it comes to PC peripherals, one of the best FPS mice (from a brand many people say is overpriced mind you, you can get cheaper) is only $60. Paying hundreds of dollars for any peripheral is somewhat a waste unless you are a top tier player or you have a very niche need (handicap for example). And even then, top tier players usually want a no frills, accurate solution. Not something that costs a lot of money with a lot of bullshit tacked on (this isn't talking about the elite, just shit like this, though that still isn't a super expensive mouse).

For a 1440p set up you'd probably have to extend the budget to $800-1000ish

Razer Deathadder (for FPS) - THe DeathAdder is the staple for a lot of FPS gamers. Simple, smooth, responsive, and comfortable. Personally I love the feel of this mouse in my hand and it is quality built.
Logitech G700s (FPS/MMO)- The G700s is one of the best rechargible gaming mice with long lasting battery so you don't have to worry about it dying mid game. Also with over 13 programmable buttons on the mouse it's great for MMO and MOBA games! Personally I've only used this mouse a limited amount so I can't say just how long the battery lasts but it is REALLY comfortable in the hand and has great response.
Logitech Proteus - (FPS/MMO) - Great customizable mouse with variable weights and adjustable palm rest. 11 customizable buttons. Perssonally I haven't used this mouse but heard good things about it.
Steelseries Sensi (FPS) - I can't praise this thing enough. Smooth, comfy, basic and beautiful! Personally I have this mouse personally and love it. it's not fancy but boy does it just work!

I play lots of games, but BF3 is the only one that requires most from my mouse/ keyboard. The one you linked sounds great, but the price goes way higher than I thought it would be and I prefer how deathhader/ other mice looks. I have some razer stuff and didn't get any problem at all, they work great. Guess Ill stick with deathhader, but now my problem is there are so many lol. Is there any big difference from Chroma to Default one aside from multi color leds? If chroma works better I may get it, but probaly won't use the "chroma".

Don't focus on an "MMO" mouse use what is comfortable, I HIGHLY recommend the Razer Deathadder It is excellent and nothing too flashy or expensive.
Since, you said you liked larger mice, I would recommend the Razer Deathadder. And no, not because its Razer, simply because its HUGE! Like I mean, its giant. At least to me. I have small hands. If it helps any my hands can't even touch the ends and i have 15-16 cm hands.
