Left-handed gaming mouse would also work; the game does control pretty well with the mouse and keyboard, and if you have more buttons on the mouse to activate things, it would work with just the mouse.
It also works with with xbox or playstation controllers for PC.
It's pretty good with a lot of options, and you can create your own custom control setup as far as what buttons do what.
The kind of mouse I'm thinking of would be a left-handed MMO mouse with programmable thumb buttons.. Something like this should open up the possibilities for what your mom can do with just the left hand.

You could pick up a left handed MMO mouse and try out Diablo 3 or another ARPG? This one seems like a decent one!

So, a couple suggestions:
You might consider getting a (left-handed) mouse with a lot of buttons on it and then mapping those buttons to keyboard functions. Here's one on amazon.
That should give you most of the keyboard functionality you need (jump, item select, etc).
The thing that will be most difficult is that you need some way to control your character movement. Some folks mentioned foot pads. Also, if you have sufficient dexterity in your arm, you might try getting a large joystick and affixing your hand to it in some way (velcro straps or something?) and then mapping joystick movements to WASD.
Use a left handed Naga. I main havoc and I use a right handed logitech G600 (lot more buttons but I don't use like a third of em). I don't have any issues with my hands but looking at my mouse and keybinds you could pretty much get every important ability on the mouse. If you can press shift with your bad hand, or bind shift to the mouse wheel or something you could double the amount of abilities on buttons and not need a single macro.
Edit: You'd also probably have to bind jump to a button so binding the mouse wheel to shift would be the best option in this set up freeing up your thumb to access to potentially 24ish commands depending on what you do with jumping or other things I'm not thinking of.
As a fellow left-hander, I feel your pain. Hard not to drool over the gaming mice and realize you can't use one.

Ironically, I tried it but couldn't get used to it so went back to a non-ergonomic non-gaming mouse.

You're definitely not gonna be as good without a hand on the keyboard, but bind those keys to critical abilities, then use the mouse clicks to move around. It can be janky sometimes, but it worked out for me.
I'd suggest grabbing a Razer Naga or something comparable. I use it for 90% of my gaming nowadays. He may have a hard time with some fast paced raid encounters, but dungeons and all other content should be easy to do one-handed.

Your alternative is to become a clicker. I would imagine that this would have far greater implications on your gameplay though.

I can typically play the game with just my right hand using a logitech mmo mouse and still have most of the efficiency of using both.

I'd say either Razer's DeathAdder for Lefties
or an ambidextrous mouse:
Steelseries Sensei (which should be close to if not identical to the one you have)
Steelseries RAW (on the cheaper side and close to what you have)
The Sensei will have the same texture as your mlg mouse, the RAW will have a slightly different, less "slick" feel.
edit: Looks like Razer has a Left-handed Naga as well if you want some extra buttons.

Logitech G13 was already suggested; since you'll be using your left hand, this would also be a very viable option so you choose to still use a mouse (with WoW's targeting system, you may consider the mouse if the G13 doesn't work out):

Edit #1: This mouse also has the scroll wheel left/right tilt, which in my opinion works great for strafing. Might take some getting used to, but this could be a good all-in-one for you.
