I used to work as an EMT, and I've seen a few occasions where belts needed to be cut and windows broken. One guy I treated put his car into a deep narrow ditch and the water killed the electric windows. He punched a side window out with his fist, which I didn't think was even possible. Tough dude.

They work great, and you can zip-tie the holder to your parking break handle. It'll still be there after you roll upside down, and you'll still be able to find it.

As for EDC, we, as a community, regard it as an act of faith that every properly-appointed person ought to have a suitable knife along with them, lest they be stymied by the first bit of stout cord they encounter. There's a million great choices, get whatever you like.
The Surge is a great general purpose multitool. I keep one in the trunk of my car, along with a Leatherman Bit Kit.
I would recommend that you also keep a small tool, specifically designed for vehicle emergencies, within easy reach of the driver's seat. It's good to have a seat belt cutter and a glass breaker in case you get trapped in the vehicle. I use the Res-Q-Me for that purpose. I discovered that if you get the visor mount for it you can attach it to any of the levers on the steering wheel, which keeps it handy.
That’s why I have one of these on my keychain. I encountered the same thing in an alley. And got 2 of his windows before booking it.
People will use those spring loaded ceramic spike tools like the "resqme" or even just the tip of a sparkplug. Ceramic is crazy good at breaking glass.
That sounds targeted overkill tbh. I don’t remember the last time I wasn’t stopped going through security, because I have a metal bracelet that I can’t take off (literally, my hand has grown too big for it to be removed). They wand me down and send me on my way.
Coming through Nicaragua though, they confiscated my seatbelt cutter. Literally have taken it through 6 other airports, but nope a blade the size of an exacto, trapped inside a hunk of plastic got the dogs and dudes with machine guns on me.

this isn't home related, but def the best thing i've come to own in awhile! this emergency car tool is really convenient, as it comes with a zip tie to hang it from your rear view mirror... then if you need to use it you just grab and yank it out of it's holder! i haven't had to use it, thankfully, but i know it'll be awesome if i ever do have to because i won't have to freak out wondering how i'd get out of my car!
The headrest thing might work but many headrests don't come off and steel, even if it's hardened, isn't very effective against tempered glass which is why glass breakers are made with a carbide tip. Just get a Resqme escape tool or something similar. I suggest these ones because they're small, have a seatbelt cutter built in and most importantly they're spring loaded meaning you just press them against the glass to trigger the glass breaker. I don't like the hammer style ones because it's very difficult to get a full powered swing from inside your car especially if you're chest deep in water, upside down, have a head wound or have a broken bone.

Get a res-q-me. Attached to your key chain (so it's always in reach) has a seat belt cutter in case your seatbelt is jammed, and has a spring loaded glass breaker (so you don't have to try and swing a hammer underwater)
One in the glove box is great, but if there is a collision your seat belt might lock up and you won't be able to reach it. Or the collision/rollover could cause everything to be thrown around and you'll waste time searching for it.

Will do the job a lot better than the knife you linked and get you a plain edge assisted blade on a decent knife.
Anyway, if you provide details on what you'll use the knife for we might have better suggestions. Spyderco and Benchmade make great rescue tools, but they aren't assisted and have serrations. And they're pricey.
Assisted is very common in very cheap knives that use the spring to make up for the poor action.
The nicer rescue knives have serrations because they're a lot better at cutting fabrics.
Rescue knives also usually have rounded tips, so you don't stab anyone when trying to cut their seat belt.
