Why don't you trust her though? Do you use baby gates at home or is it just the water bowl thing? How long are you leaving for?
For the water bowl: Look for car water bowls and you should find something like this: Prestige Non-Spill Bowl
It almost impossible to knock over (unless the dog is really, really trying) and there's a floating inner to it that drops as the water level goes down, so there's always some drinking water at the top but not the whole bowl.
We use it in our kitchen because we were always booting the other one around the floor by accident.
Highly recommend a water bowl like this one, our little pub would get water all over the kitchen the second we went out the room. They press down with there nose to get more water so there's only a small amount of water on the surface at any one tkme

My dog has a tendancy to chomp at a water bowl which spreads water everywhere. We got him one of these bowls which is meant to be a non spill bowl in a vehicle. It has a floating plate in it which he has to push down with his tongue to get water, which he then has to lap. Completely elimimated the water chomping (but if a normal water bowl is available he will revert back to his chompy messy ways).
I thought he'd need some time to get used to it but he figured it out right away. You just have to be slightly more aware of how much water is left as you can't see easily at a glance.

lifesaver. i took out the floating part + put a stainless steel bowl inside just to make it easier to clean.

It has made a huge difference. He has more than enough face to get his face in and drink, but it's too small for him to go swimming in it. He DOES put his paw in from time to time, but compared to before it's like night and day. Also, it slowly distributes his water as he drinks, so he can't gulp it down like he would otherwise.
