Bend/Redmond, in Oregon. I haven't been everywhere, hell I haven't been to many climbing destination spots, but of those that I have been to it's the easy winner, especially since you also like mountain biking. The trailheads there are world class (good enough for mountain bike shuttle companies to exist).
We've been going to Bend every year for the mountain biking since before my wife and I got into climbing, it just so happens you have the birthplace of sport climbing right next door at Smith Rock State Park. Within the span of a couple days you could ride the epic McKenzie River Trail, climb Monkey Face the next day, then go ride a super awesome flow trail for a nice rest day. The trailhead is massive, the amount of sport climbing makes for a huge and popular guide book, and that doesn't even touch winter snow sports or the other available outdoor activities. It's a rare week in the Bay Area that goes by without me trying to concoct a hair brained scheme to convince my wife to sell our house and move to central Oregon; if I could move anywhere right now, Bend is where I would be.
e: Their breweries are amazing too. Boneyard and Crux can compete with the best of them. The only downside of the place is that it's become a bit too popular and is starting to have a bit of a 'rich white person vacation destination' vibe in Bend proper, but Redmond still has dirtbags.
