AMGA Rock Climbing Single Pitch Manual covers a pretty good level of knowledge for most single pitch climbing skills. Also know to observe local access issues and Leave No Trace principles.

FotH is a pretty broad textbook on general mountaineering. As a more focused book, I'd recommend the AMGA Single Pitch Manual.
John Long's Climbing Anchors is also a good overview for beginners.
