The older style of jungle boots did have a light metal lining in the sole to help protect against punji stakes, but other than that they're not going to be that much better at protecting your feet than other leather boots like Red Wings.
On the other hand, they are well made long lasting leather boots. Boots designed for wearing them for long hours and be able to take significant punishment of constant use, minimal upkeep and good grip under variety of surfaces.
And most importantly if you buy surplus boots or mil-spec boots you're gonna be getting them at a reduced cost when looked at quality vs price; the US government pricing and economies of scale that force these boots on the average recruit means they're going to be cheaper than the civilian counterpart when you compare them blow for blow.
So if you're looking for good leather boots for work, feel free to go with mil-spec ones. Just don't think you're getting a massive safety improvement.
