I love this cookbook in general. Each recipe is marked as vegetarian, gluten free, or whatever else is appropriate for that recipe. There are some really good (and adjustable and forgiving) recipes.
The Moroccan Lentil Salad recipe in it is amazing, and also super easy to adjust to your family.
Perhaps you should eat more fats. Fats make us feel satiated. Healthy fats are absolutely necessary in our diet as runners.
I highly recommend reading this book by Shalane Flanagan.

That's a great point about pacing. I've been starting out fast, near the fastest pace I used to be able to run after consistently training for months - so obviously I burn out fast. I'll work on going the pace I need to, even if it feels too slow, and look at my progress over time.
Committing to a schedule - definitely something I need to do. I'll work on being better about actually planning out my runs, and not completing an amorphous "run for what I feel like" workout.
Have you heard of Run Fast. Eat slow.? I definitely don't want to fall into the trap of overeating with "runger" then not achieving my weight loss goals. I, however, find calorie tracking a bit difficult mentally... and would prefer not to do it, if possible. I'm considering just planning out meals/snacks from that cookbook and some other whole foods cookbooks, then see where that gets me? Or maybe I need to track calories.
I have a Garmin! I absolutely love it. The one I have has a wrist HR monitor, which I'm sure is not as accurate as a chest strap. Thanks for the SmashRun suggestion, I hadn't heard of that site before!

There are several diet/cooking books aimed at runners. They won't give you a set plan, but they give a good outline of what you might need.

I just picked up a couple of others, The Feed Zone Cookbook (https://www.amazon.com/Feed-Zone-Cookbook-Flavorful-Athletes/dp/1934030767/) and The Endurance Training Diet & Cookbook, (https://www.amazon.com/Endurance-Training-Diet-Cookbook-Triathletes/dp/1101904607/) both of which look good. The Feed Zone guys are cyclists, primarily, but the main points should still be relevant. One thing I notice about their recipes is that they're relatively carb-heavy. If you can get one of these at your local library, it might be worth thumbing through them.
