Simple solution, and I’m not being an asshole or belittling you
Put childproof covers on the knobs if the issue is accidental bumping into them.
The cover freely moves but doesn’t cause the knob to move. Unlatch to use the knob and then latch it back up when you are done
We had the same problem in our last home (range was from 2004)... When my first child was born we found knob covers that prevented them from being turned (without opening the cover). We decided to just keep them on because they also prevented accidentally turning on the gas.
Very low tech but effective if you have an older stove.
I believe it was these:
I had the same problem with my dogs. They'd jump up, trying to see if there was any food up there and inadvertently turn on a burner. I've always been fire conscious, though, so I always make sure any areas around open flames are clear by at least five feet. As for the knobs, we got some of these. They work a treat while I continue my efforts at conditioning them out of counter-surfing.
I agree with your wife..the slide in stove does give cleaner lines!
I converted to a gas slide-in with littles and pups in the house, and the first time one of the dogs jumped onto it, I regretted it! The knobs on the front had me paranoid about the gas and fires....But then I found these little guys, and haven’t looked back: Safety 1st Clear View Stove Knob Covers, 5 Count [link]
Figured I’d save you the stress of regretting the decision!! It looks fabulous!
One of my cats did the exact same thing, had a terrible headache most of the day after waking up. Bought these knob covers afterwards, they were literally lifesavers.
Perhaps consider installing something like these childproof knob covers on your stove.

Came home one day to the stove lit, dog had gone counter surfing and managed to turn the stove on. Went and ordered these immediately.

If you want further inspiration - these are the child safety knob covers I have on my gas stove. You have to push a button to release the cover. [link]
I hope that works, since OP is talking about the baby trying to climb up on the oven, not just play with knobs.

or use child safety covers
Did you know you can buy child safety locks for your oven?
Also, make sure you never put Tupperware in a gas oven. For obvious reasons.

Except your oven doesn't seem to be child proofed.
Looks like she childproofed hers by removing the knobs. Instead, you can get these: [link]
