Lately I have been putting a sort of salsa in my sandwiches. I half then microwave a bunch of cherry tomatoes in thirty second increments and pick out the skins. Then I mix in a little ketchup, brown sugar, cider vinegar, chili powder, onion powder, garlic powder, and a dab of mustard. It is so much fresher tasting then ketchup. I also make copycat Big Mac sauce. I am big on bread & butter pickles but fresh cucumber slices are very nice too. Adding thin slices of onion is nice if you don’t breath on anyone... the red onions are more mild. Coleslaw of any kind is great in a sandwich. Napa cabbage is good or spicy kimchee. I sometimes put potato chips or tortilla chips in my sandwiches. Sometimes I put dijon mustard or Japanese wasabi paste in my sandwiches which is really good with cheese. Cream cheese can add even to a sandwich with slices of cheese in it. There is a “bacon jam” I get at the grocery store which is nice used in moderation. Huy Fong sriracha sauce is good on a sandwich if you like spicy. You can mix up flavored mayonnaise. You can mix spice blends like Tandoori or Shwarma blend into mayo or ketchup. You can try fruit like slices of apple, sliced strawberries, halved green grapes, etc. Those work with cheese or chicken or turkey salad. You could try making meat spreads like from corned beef or Spam. Those are traditional picnic sandwich fillings from Hawaii that you can google. They are actually good. Alfalfa sprouts are nice on a sandwich and tahini paste is a little bitter but always good on sandwiches that have a lot of vegetables in them. You could make a Japanese carrot-ginger salad dressing like served on lettuce at sushi restaurants. You can try Asian sauces like teriyaki or Sweet Thai chili sauce.
