Seeed Odyssey might fit the bill for you. A bit over 200, but it does come with a 128gb SSD at least.

ooh okay, two nvme ssd's is super overkill in that the failover has no benefit to being very quick even if you wanted to store the exact failure that brought down your computer. That said, below are some links you can have fun with:

I'm not shopping for the best price but I hope these give you some ideas :) Otherwise there are add on cards for raspberry pi and external drives. There really isn't enough space on most of these small computers other than the bare minimum. Will add more links if I come across anything interesting.
