Much like the Inkbird that another poster recommended, I use the SensorPush tempurature and humidity probes to monitor our crawlspace, greenhouse, and chicken incubators. They connect to your phone and have a really long memory so even if you only walk by the sensor occasionally you'll still get the history of what the trends have been. The listing says they store 20 days of data but it seems like much more to me, we have one that I never seem to be near but it always is able to catch up months worth of data.
They require no other devices, hubs, etc - just a phone - but there is an optional hub that you can get if you want to keep track of multiple of them without having your phone nearby.

The Govee didn’t line up well with any other hygrometers that I had. Between the ink bird humidity ink bird temperature controllers. As well as 3 other hygrometers. I kept getting -3 to -5. Differences on it. The calibration doesn’t seem to hold well.
Other than that I think it is a great budget choice.

I have 6 of those very sensors in various areas of my house.
They're pretty accurate in my experience. I've compared them to a high rated Bluetooth sensor (https://www.amazon.ca/gp/product/B01AEQ9X9I/ref=ppx_yo_dt_b_search_asin_title?ie=UTF8&psc=1) that I no longer use because I can't use it within home assistant.
I am using SensorPush wireless thermometer/hygrometers in my crawlspace and other parts of my property to collect humidity data. The cheapest one is 50 bucks, you connect to it using your phone. They are very accurate and I love these little guys. They have a few models, going from 50 to 90 bucks each.

The only downside is they have space for something like 30 days of data, so you have open the app once a month or so. They sell a “gateway” which can play this role, continuously reading and storing data from all your meters and making it available to the app and home automation tools, I haven’t needed to spend the money yet.
For leak sensing though, I use different devices made by Eve and other vendors. I have a HomeKit household with a lot of apple devices, and you can buy these leak sensors that will audibly and via Bluetooth/wifi alert to a leak.
Cool project - fun to see people being creative. For peace of mind, I’d recommend a humidity sensor. I’ve had this one for 3+ years now and it’s still running strong. This can push alerts to your phone if the temp or humidity exceed a set number. Lack of airflow can be problematic in certain climates (source: am Building Inspector)

Definitely check out this temp/humidity sensor. Mines been going for 2+ years without a battery change. Long Bluetooth range and you get tons of saved data pushed to your phone.

Is this the sensorpush device you have? It seems like a lot of reviewers have found calibration issues?
Sensor Push is what you’re looking for. I’ve been using one for about two years now and no problems at all.

I came across this on Amazon on thought it could be useful to monitor hive conditions. Any thoughts or experience with it or something similar?
I use a SenorPush temp/humidity Sensor that will store 20 days of data on the device for monitoring attic temperatures. Once you download the data it will remain in the app forever.
They also have a hub that allows you to access the data from anywhere and will store more of the data, but I haven't used it. All in would be $150 and do exactly what you are looking for.

I have two of the SensorPush models and love them. I much prefer the software and design of them to the Bovedas, and having the option to get a WiFi base is awesome.
If you want a neat and awesome recording temp device (great for troubleshooting) get this.
I use this SensorPush for my job box in the basement. It connects via bluetooth, can send you alerts if temps or humidity go beyond the range you set, and it stays connected from the basement to the 2nd floor of my house. Highly recommend.
It costs a little more, but I've sprinked these around my house and shop. They keep a log and transfer it to my phone when I'm nearby with Bluetooth LE. I'm considering adding the WiFi gateway so I can monitor when I'm away as well:

Looks awesome, but I need access to the data through an app I'm creating, instead of having to use the app built by the same company. Does that exist in any type of hardware like this?
Long story short, I want to create an app that will be able to connect to IoT devices, and not focus on developing the hardware itself.
I just bought this a few days ago and I'm totally impressed. It works via Bluetooth. They recently came out with a wifi gateway so you can check in on it from anywhere, but that's $100. So fuck that, I'm going to wait until the price drops to pick up the gateway. But for now the SensorPush is pretty awesome.

I'm a big fan of this if you want to be able to check via your smartphone.
You could somehow monitor the temperature on both sides and see if one is getting more heat than the other. Amazon has this little bluetooth thermometers. They are a bit on the expensive side but they do a great job of keeping temperature and humidity logs.
I just have the $50 one , I don't think they had the other ones when I got mine a year ago but I found this chart that explains the sensors' differences!
Hmmm..if you plan on just leaving the sensors in a tent and syncing once you're in range then you won't need a gateway! The gateway is just meant to "give wi-fi" to the sensors and let you see the data while your phone's not in bluetooth range of the sensors. And if you don't have the sensors within wi-fi range of the gateway then there's no point of having a gateway! The $50 sensors hold data for 20 days according to that chart so if you don't plan to constantly monitor the data then you can just get sensors 🤙🏽
Hey, yeah I got them on Amazon. They're not super cheap, but much cheaper than losing product. They are not super fast so if temperature suddenly raises they will take probably 15-30 minutes, as the probe is encased inside, but for my purpose they're pretty great. At one point I was actually in contact with the company, talking about testing a new product they were working on that was faster, but I haven't kept on it.

I picked up a Wine Enthusiast 18 bottle dual zone wine cooler. Found one cheap on CL. Works great, holds a steady temp, so no need to run it through an Inkbird controller. I use my Inkbird for my humidifier and dehumidifier. It bluethooths to your phone and keeps a running log of both temp and pH. I can send you a screen shot if you want but the data with the ease of a phone app for less than $50 and I'm in love.
I'm confused what is happening here. If the AC is blowing the back should be cool enough regardless of extra shading.

Seems nice. My only concern is if the one sensor will be able to give me an accurate reading for the entire space. I live in a 2400 sq/ft. ranch, sort of shaped like a "U" if looking at the house from an airplane.

Since it sounds like you need to turn on/off your heating manually, just having connected thermometers in each room would work for you.

I’ve been eyeing the SensorPush but it requires a $99 hub to reach outside your home. If this isn’t the case with these I’d bite.
