They do make little bottles for spraying oils that would probably work.
That said.... don't actually try to use this for defense. Your homemade pepper spray is extremely unlikely to be as effective as commercially available spray, and pissing off an aggravated attacker instead of incapacitating them is a great way to literally get killed.
Make homemade hot sauce for everyone for Christmas and buy Mace from the store.
