I use this over-the-door pocket organizer that I purchased on Amazon. It works great! I can fit one full bag of v3.0 or two partially full bags of v3.0 in each pocket.
I totally get it. I had to force myself and my husband to donate or throw away a lot of stuff even though we are pretty minimalist to begin with. We just needed more space. We also got this over the door organizer which we love because it comes with cardboard inserts to make the bins sturdier and structured. It might be worth it to hang this over several doors to create some extra storage!

This is the one I got. I love it, its roomy and sturdy but not overly bulky. I also put command strips along the bottom so it wouldn't move. But noticed once it was full of stuff, it doesn't move much anyways.

Amazon!The hooks are really small so they don’t make the door super hard to close which I love.
We use these, and just hang them over the closet doors.
I ended up doing that too. I got two over the door closet organizers and hung them on a spare closet door. It makes finding cables so nice.
This is the most cozy room ever! I loved putting it together. I only had the coffee table when I started out and debated keeping it as part of the room but it's going to make a great activity space soon enough.
The dresser is an Ikea Hemnes and I put a portable foam change pad on top with some changing stuff. The top drawer is fully stocked with changing goodies and I'm happy I decided to go with a closet organizer because her hats, gloves and socks were such a mess without it.
The crib is from babiesrus.ca Oxford Baby Skyler Convertible and the quilt was hand made by my bestie! The bassinet is hanging out in here too until baby is here. I got it second hand but it's a perfect condition Fisher Price one with lights and vibrations.
The frog stack is leftover from the room being my partner's office haha we love those guys.
Blackout curtains are from Bouclair, as is the yellow blanket and pillow on the chair and the Smile sign.
I found the glider/recliner on FB marketplace for $300 and I love it!
Lastly since my little girl will be coming home around Mid March, I made the Graco Travel System nice and cozy with a JJ Cole car seat cover and a head hugger for extra support.
I don't have any pictures, unfortunately. However, I will give you a list of things my roommates and I had to buy to make life easier.

Finally finished our second daughter's nursery at 37 weeks! We didn't have a house when our first was born, so this was really exciting to be able to do. A LOT more work than I expected went in to designing and decorating a room, but I'm SO glad I did it (including painting the room at 30 weeks!) This is definitely my favorite room in the house now!

Rocking Chair- Bought new off of FB marketplace. This was something I desperately wanted to have with my first, but couldn't because my parents' house didn't have the space for it. I'm excited to have one for this babe!
Hanging Closet Door Shelves - Bought from Amazon. These are really sturdy and it's nice to have a place for miscellaneous things right next to the changing station.
Bookshelf with Reading Nook - I'm super excited about this! It's a bookshelf and it's currently full of my 3 year old's books, but it's eventually be full of books and toys for the new baby. I like that it gives my toddler a place to go sit while I'll be busy with babe. My toddler really likes it.
Footswitch for the rainbow table lamp - I'm just really glad I thought about turning the lamp on with a baby in my hands before the baby is here 😅
Painted rainbow on the wall - my sister helped my with this. This rainbow was the source of the separate meltdowns in two different Home Depots. I absolutely was terrified of picking the right tones drawing the rainbow "good enough" because we free-handed the shape.
