Some people claim older eggs are easier to peel once boiled. So maybe use the grocery store eggs instead of farmers market eggs. Our eggs usually are from Costco and for whatever reason they are always easy to peel and I don’t do anything different than you do except for soft boiled I cook 8 minutes starting at a boil and lowering to a simmer after eggs are in.
