Aside from that, the Traveler's Gate Trilogy by Will Wight has a major item collection component to the story. It's not the primary focus, but getting items is a huge part of how the main character gains power, which is integral to the overall progression of the story.

Six Sacred Swords by Andrew Rowe. It's the first book in his Weapons and Wielders series and one of the main characters is an intelligent female dragon (who can take humanoid form).
It's progression fantasy, and it's more light and action-oriented than traditional high fantasy. So it's not necessarily within the same genre as the books you mentioned liking.
There are two other series in the same universe which do not feature intelligent dragons.
However they aren't requisite to read as all can work as standalones.
He also has a standalone novella, How to Defeat a Demon King in 10 Easy Steps, which does not feature dragons but might be a good starting point if you want to see if you enjoy the author and the tone/genre of the Weapons and Wielders series. Demon King is a bit more of a straight-up parody of games like Zelda and Final Fantasy than WaW, but both feature lots of dungeon crawling and humour.

That's basically what I'm doing with <strong>Weapons & Wielders</strong> - the main characters are virtually all talking weapons and the people that wield or protect them.
Just as a note, I think <strong>Six Sacred Swords</strong>, the first Weapons & Wielders book, is still free with Prime Reading if you have that. Chronologically, it takes place after the War of Broken Mirrors, but it's designed to be readable without reading them first (and if you're looking for a kind-hearted protagonist, it's a better fit than the War of Broken Mirrors, since those are multi-perspective with some people that are nicer than others).
I love this sort of stuff.
The web serial Delve would be a good example, although some of it is more town-bound rather than directly adventuring focused.
Will Wight's Cradle novels have some elements of this sort of thing, although the protagonist does have a major threat to deal with eventually.
My own Weapons & Wielders series has a lot of this in the first book, <strong>Six Sacred Swords</strong>. The second and third books are a tournament arc, but I plan to do a lot more of the exploration stuff in Book 4+.
I'm a huge fan of magic swords.
My biased answer is that Dawnbringer from <strong>Six Sacred Swords</strong> is my favorite. She'd be mad at me if I said anyone else.
Aside from my own works, though, I really just love intelligent swords in general.

If you haven't seen it already, <strong>Six Sacred Swords</strong> just came out a few days ago. That's a prequel, but if you like the Arcane Ascension stuff, you'll probably enjoy it. It's more adventure focused.

The novel focuses on the adventures of Keras Selyrian, a powerful swordsman who begins a quest searching for the legendary Six Sacred Swords. Stylistically, it's tremendously inspired by Japanese games like Final Fantasy, Dragon Quest, Ys, and especially The Legend of Zelda. It's also very light, comedic, and optimistic in tone, with a protagonist that leans toward non-lethal combat resolution when possible.
Six Sacred Swords is a spin-off/prequel of my Arcane Ascension series, the first book of which is <strong>Sufficiently Advanced Magic</strong>. It also serves to connect the Arcane Ascension books with my <strong>War of Broken Mirrors</strong> books, and has some characters and elements from those as well. You don't need to read any other books to understand this one, but you might understand a few additional references if you do (similar to how Sanderson's cosmere books work, or Marvel Cinematic Universe movies, etc.)
Compared to my other books, this one focuses more on dungeon crawling and adventure. I mentioned The Legend of Zelda as the strongest influence because there's less political stuff here than I usually write, and more of a focus on just traveling around and dealing with strange new places and creatures (whereas my other books probably lean more toward the Final Fantasy side of things).
I hope that people enjoy the book if they decide to check it out!
There are two series you can move to from here: Weapons and Wielders and War of Broken Mirrors. If you really liked the feeling of AA and want continue that, go with Weapons and Wielders. If you want a change of pace to a more traditional epic fantasy, go with War of Broken Mirrors. The plot is a bit more satisfying with WoBM first, but the difference is marginal. After you read both stories, you can go on to Luck's Touch, a canon short story about teenage Aayara written by Tabetha Rasa. Happy reading!

I often enjoy dramatic moment progression, too, when it's executed well. The Stormlight Archives by Brandon Sanderson is one of my favorite examples of this; all of the power ups are very clearly tied to key moments of awesome.

Arcane Ascension is almost entirely reliable progression, especially for Corin himself, and most likely will be for the future. There are some small exceptions, like >!Sera drinking the potion at the end of book 1!<, but often with obvious consequences like what happened in the aftermath of that. I also sometimes have "dramatic reveals", as opposed to power ups, like when >!Patrick uses Bright Reflection!<, etc. I prefer those "reveals" because I can include the setup beforehand in a way that feels fair and coherent, whereas arbitrary power ups are harder to justify in that particular magic system.
My War of Broken Mirrors books are generally more on the reliable progression front as well, with some exceptions. They also have less of a progression focus in general. They're much more stand-alone and plot focused.
The one with the closest thing to dramatic moment progression is probably <strong>Six Sacred Swords</strong>. This is less about the protagonist actually powering up in dramatic moments and more about whether or not the protagonist (Keras) willing to pay the price to use power he already has, but thematically and emotionally, that's still probably going to feel closer to what you're looking for. If you want to try another one of my books, that's the one I'd recommend. If you liked the dungeon crawling content in my books more than the magical school stuff, it's a lot like that, except with a slightly lighter tone. It's also a lot shorter than SAM. If you do end up reading it, I'd be curious if you like it more.
I have another series that hasn't launched yet that is going to be much more dramatic moment power focused - the magic system is built to make that feel organic - but that's still a ways off.

This is the first book in a progression fantasy series, although the first book is more of a straightforward and lighthearted adventure, and we don't get too deep into the progression and training aspect until the second book.

The story is heavily influenced by JRPGs and action adventure games. Zelda, Ys, Final Fantasy, and Dragon Quest are probably the most obvious for this particular book, but the series itself is littered with references to the others. The flashy, anime-esque style of combat and magic is very strongly influenced by JRPGs as well.

Book 2 is much, much heavier on traditional training and power improvement, with lots of new powers and loot. Book 3 is more like Book 2, with some even zanier stuff in there.

It takes a lot of inspiration from things like Maoyu Maou Yuusha and Yuusha Yoshihiko.

It's a lighthearted adventure story, with a lot of nods to various classic games from the NES, SNES, and Playstation eras. You might enjoy it if you're in the mood for talking swords, bibliophile dragons, and a lot of accidentally breaking traps and puzzles.
