If you want some information on music specifically. there's a book called Sondheim on Music which is a written out interview with Sondheim.

This book is basically a massive interview of Sondheim on his music.

Beyond that, Sideways is a YouTuber who has broken down many of Sondheim's works and many other musical theater and movie scores. His work is absolutely fantastic. I suggest it highly.
