If he's doing a lot of cutting I'd recommend something in s30v or zdp189... unless he doesn't mind a non-stainless blade. M4 is hardcore. Spyderco has a production model in that.. the gayle bradley

From the sounds of it, I think you would like the Spyderco Gale Bradley folder. Gorgeous knife, carbon fiber handles, with a CPM M4 blade. It's known to hold an edge a really long time.
Otherwise I'd go for the Benchmade 941 or Spyderco Para 2.
