Yeah, I was just offering another viewpoint bc even if it's money set aside, it could still be used for other things like a sous vide machine or something else if pan frying really is the same.
I personally use https://www.amazon.com/dp/B01D0MDZRO/ref=cm_sw_r_cp_apa_i_jDtOCbT7XTA8J, which acts as my stainless steel "cast iron", because the aluminum base is so thick it has similar properties. You don't need it to be a good heat retainer though, youre not searing a steak here so it's completely irrelevant, any deep pan would work identically.
Use a clip-on thermometer to keep it between 325 and 375, and I've since learned that for my stove the midpoint between medium and medlow will keep it steady at 350 given that there's chicken in it. You'll figure out your stove. Just fill the pan up with oil and it's good to go, and 12 inches is plenty of space for 4-5 sandwiches per batch. I mean, a pan with a clip on thermometer, flipped up with a deep vat of 350F oil, is basically the same setup as a deep fryer.
If youre making small meals for 1-2 people, I'll tell ya, while true deep frying in the pan works great, the only difference between deep frying it and shallow frying + flipping is the cook time. When making drum sticks it's basically like a grill, turning on all four sides. If you're cooking for a family and want it hands off, then yeah just fill the pan with oil and let it cook itself. But if I'm one person cooking one meal, I can't justify so much oil, even if I filter it and save it for a couple uses.

No worries. If you're looking for a decent SS pan that won't kill your budget, Chef's Choice is pretty good, IMO. Cuisinart and Calphalon are good, too, and not much more expensive than Chef's Choice.
