Aeropress if you're a solo hiker... But I never backpack solo and we all drink coffee, so I use one of these:

I've used the aeropress and prefer this for a few reasons:
-i can boil the water and brew coffee in the same device.
-it replaces my backpacking pot and it's big enough for 2 mountain house
-it fits my compact stove, propane, and even some coffee (depending on how much I bring)
-efficiently utilizes the space in the side bottle holder
-it can make multiple cups of coffee at once
The only con, to me, is that cleaning the grounds is kind of annoying. But this is coming from a daily aeropress user.
These Stanley cups with the plastic filter insert thing are awesome. I have 2 of them. The complaint I hear is that it's not insulated, but I want my coffee to cool down to a reasonable temp in a reasonable amount of time, so it works for me.
You can cook in it and even mod it some to hang over a fire, etc.
You can also fit a small burner in it.

These are cheap and can always be found on eBay for $10-$12. I wouldn't trust my survival on it, but I've had one for a handful of years, and I use it mainly for morning coffee when camping.
