I'm looking to get a Stanley cup, which I've seen nest perfectly with this bottle and essentially together work as a complete cooking setup.
You should maybe consider adding a canister stove, they're pretty cheap and fuel is cheap as well. The BRS line of stoves can be had for sub $20. The BRS 3000T is a staple for ultralight backpackers. All you need after that is a bic lighter, fuel, and a cookpot. You could use a cheap aluminum mug, or a coleman cookset which is also pretty cheap and comes with cups.
This would allow you to do things like do a little cooking. Rice. Beans. Eggs. Ramen.
Personally one of my favorite trail meals is pad thai. Just dehydrated or canned chicken, instant noodles (the thicker kind), peanut butter, sriracha powder/sauce, and a seasoning packet.
Think of each pita like a full sandwich. So do you WANT to eat three sandwiches a day? I’d think one a day would be enough for me. Get yourself a cheap little camping stove (the kind that fuel and just the screw on burner. Then get a little coffee set or pot. Here’s my low cost camping menu (I don’t see why you can’t use this for non-camping travel too): Coffee/Tea and oatmeal for breakfast using boiled water from your camp stove above. Canned tuna/chicken with crackers, trail mix, nuts, or granola bars for snack. Pitas for lunch is a good idea-I like hummus and turkey for mine, but pbj is surprisingly good on pita too. A quick, cheap dinner is diced ham and instant mashed potatoes. Pre-portion it in plastic bags and then poor the hot water in and mix it up for a mess free meal. Bonus if you can throw some cheese on top. Legit my favorite camping meal when I don’t have time for a full campfire cook.
You can do pita for breakfast, lunch, and dinner, but that seems…extreme. Spice up your trip with a couple easy meals for variety. Honestly everything above could be made and eaten in 15ish minutes and I think would greatly increase your enjoyment of the trip.
Stanley cook set. It's only $11, and you can usually find it on Amazon and at Walmart. It's stainless steel and super rugged, but not too heavy. Allows you to boil water and cook food (stove and/or fire not included!). I still can't believe something this great is so inexpensive...it will last for many, many years.
The plastic tab lid handle can be replaced with a 1-inch diameter key ring to prevent melting over a campfire. The same size key ring on the skinny part of the handle let's you hang cook set from a stick over a fire at a slight diagonal. I don't use the two includes cups with the cook set.
I started with a bugout/survival backpack in high school back in the 1980's, and it set me on the path of a very adventurous and fulfilling life around the country and the world. I wish the same for you.

I have that one. It worked good. I’ve used the cup listed below more but it depends on what your after. I use the cup for over night hikes to heat water for easy meals like mashed potatoes and chicken. The pan would be much nicer for actual longer term food preparation though.

EDIT: Also... I can fit my alcohol stove inside one if I only take 2 cups (out of the 4 that come with 2 of these). If I could improve it, I would find a way to insulate the handle, since it gets hot while the cup is heated. Keep that in mind for the first time you grab it off the stove. You'll remember it the second time, and each thereafter!! :-/

Get your packet of food. If it's clumpy (eg rice) break it up with your hands while its closed. Pour it into your cook pot with a couple tablespoons of water. Cover, heat, and stir frequently until it's hot.
Eat out of the pot and scrape up every last bit. If needed pour a little water in there and really scrape up and eat every bit.
Heat a little water and a few drops of your soap and clean out the pot. Dispose of the water in the fire pit or garbage.
Rinse out the pot and air dry, wipe dry, or heat up some water for a hot drink
When you're done put all those things inside the pot and put on the lid.

My SO and I use this basic stainless steel pot to boil water and we have these reusable flat-pack pour over filters. We bring whole beans and have a cheap, manual coffee grinder. My SO bought the grinder, so I'm not sure if this is the exact one, but it looks very similar and might be.

Very light. I put it in my cook kit. I put one of the cups that comes with, in first. The burner goes in the cup and a fuel canister goes in upside down. Lid closes perfectly.
Sounds like as far as gear your doing good, my suggestions are maybe a gum blanket they're great water proof ground barriers and dont take up a lot of room. Some have a slit to double as a poncho like they traditionally did in the old days. A good Ferro rod with a magnesium block will help with damp tinder has for me anyways, and Hot Snot fire starter works well. I got some in a gift pack and stuff works great when you're in a wet environment or dont have any tinder, it comes in a tube like tooth paste. Both sets are nesting sets and take minimal sapce. Also the dehydration thing made me think of something I toss in my first aid kit. Little powder packs of electrolyte mix you can add to a bottle of water. They can really make a difference when you're feeling dehydrated. Not a major thing but something that maybe nice to have. You can pick them up at the dollar store for like $4. The box has 2 packs of each of the three flavors.

I have this Plano 68qt bin My small dishpan fits perfectly in 1/2 of it - filled with plates, cups, silverware, dish towels, a small cast iron skillet and a pot from my kitchen. I also got this pot to use as a kettle They had a small plastic bin at Home Depot that fit on the other side of the bin - that’s where I pack my food. I usually have room for 1-2 propane tanks too, and have a separate bag for my stove.
I got thermarest base camp sleeping pads. I’m not sure they are the best choice for us, my daughter usually wiggles her way off in the night and I’m a side sleeper who could use a tiny bit more cushion. But they are warm and pretty comfortable.
I got mine on amazon: Stanley Cook set. We have the plastic cups in our camping box but never use them, and it took nothing to drill holes in the side to put a bottle holder in.

You have way too much stuff. This is excessive even for a bug out kit.
Good start, but I'd seriously pare this down. That weight is a killer. The two glaring items missing are a cook kit and a water filter.
This Stanley Kit (only $9!) paired with this mug ($4 at Walmart) is a helluva deal. (Nest the Stanley in the mug, lose the included cups, store your canister fuel, stove, and fire starter inside of the Stanley.) Some variation of this little stove will do the trick.
As for the water filter, the Sawyers are popular for a reason.
Oh, consider picking up a cheap dry bag or two to keep your food and trash in (especially at night). Even if you aren't in bear country, it'll save you from raccoons and other critters in the night. The cheap $5 ones on Amazon or ebay work well enough.

I have this one, and this one. they're both kinda heavy since they're SS and not titanium etc. I use the second on my PCT trip, and prefer it over the first one. Only complaint is the size, wish it was about half as big. On the other hand, I can fit the stove and a can of fuel inside of it. if it was smaller I'd save weight but lose room. Also I don't use any of the other stuff that comes with it, just the pot.

Depending on your budget, there's a few different ways you can go for carrying water.
The easiest option is to get a steel Nalgene bottle as u/Gullex already mentioned, or a steel Kleen Kanteen, just make sure you choose one that can nest inside your GSI cup. The regular plastic Nalgene's nest in the cup perfectly, but I'm not sure about the steel ones as I don't own any.
The second option is to go the uber-cheap route and use a regular plastic soda bottle. If you end up replacing the LifeStraw with the Sawyer Mini as was suggested, you can screw the filter directly on to the soda bottle and drink from it that way, removing the need to boil water. I also recommend the Sawyer filter as it is twice as effective and lasts 1000x longer than the LifeStraw.
The 3rd option is to get a regular plastic HDPE Nalgene bottle and rely on your GSI cup for boiling. The HDPE Nalgenes are very inexpensive and actually preferred by back-country connoisseurs as they have more give to them and won't crack as easily, especially when frozen. This allows you to freeze a bottle to use as a cooler when you want to keep perishable food from going bad on the trail, or to freeze a bottle half way then top off with water to keep a supply of cool drinking water while hiking. They are also more UV resistant than the Tritan bottles. Like all Nalgenes they're leak proof and nearly indestructible, you can't go wrong with anything they make really.
You could look into getting a GI Canteen set to replace your GSI cup. You can get nesting stoves and covers for these sets as well, making a pretty versatile combo that packs into quite a small space.
The setup I use right now is a Stanley Adventure cook set, a GSI Glacier cup, and a HDPE Nalgene bottle coupled with a Sawyer Mini and a soda bottle that's been squished flat to remove the air. This works perfectly for my particular backpack, as the two side pockets are mesh with elastic draw strings to hold items tight. I put the Stanley set on one side, and the GSI cup with the Nalgene nested in it on the other side. When I need more water, I fill the soda bottle from the stream, screw on the Sawyer filter, and refill the Nalegene bottle. One tip I learned to keep debris out of your filter is to cover the top of the bottle with one of those pantyhose socks they give you free when trying on shoes at shoe stores.
The Stanley set is big enough to hold all my cooking gear including an ultralight stove, and the strainer lid for it fits perfectly on the GSI cup, making it easy to cook a second dish or make a hot beverage to go with your meal.
I would suggest replacing the Coghlan's saw eventually as well. I used to have one but it broke without too much use, so I've switched to a Bahco and haven't looked back. If I had the money now and didn't already have a great saw I'd spend a little extra on a Silky (considered the best saws), but I'm 100% happy with the Bahco.
