I would advise against hot beverages in plastic unless its specifically designed to do so, it will leech plastic component chemicals.
Run to a sporting goods store and get a quality themos. For coffee I recommend the old school looking Stanley one. It will keep your coffee hot/warm for 12 hours.

You can still get the classic Stanley Vacuum Thermos for only $25, and the 1.1quart size is big enough for an entire pot of coffee. I picked up one a couple of years ago. I've even left in my truck overnight and the coffee was still very warm next morning.
Definitely cheaper than even one Hydro Flask, let alone 2, lol.
No offense, but based on your round about description of events, I find it hard to believe a thermos would fit inside. Unless we're thinking about different kinds of thermos. With handle, I'd 4.5" wide, without i estimate 3" diameter.Thermos
If you can fit a coffee thermos in your bag that's what I use to cook rice if I want some on hikes. 1 cup of rice needs 2 cups of boiling water but you just pour it in your thermos at the house or on the hike if you can boil and wait about 30 minutes.

Same. I use a Stanley vacuum thermos for Chemex and Bonavita (works better than their insulated carafe and for longer than the glass carafe with heat plate).
I have my dad's old green thermos and another smaller stainless steel thermos and both are fantastic and so handy to have. A good thermos is a sound investment.

If you fill it with nearly boiling water, dump out the water, then fill it with coffee, your coffee will still be piping hot at lunch time.

I'd start with GoYerbaMate.com, the prices are phenomenal and you can order many different bags to find what you like. Amazon also has some pretty good deals on Mate, but in my experience you can get a lot cheaper on GoYerbaMate if you are willing to order the $75 threshold for free shipping. Since you are looking to get everything you need to start, I'd def recommend starting from GoYerbaMate, ordering a cup, bombilla, thermos, and mate. They also give you one free sample of Yerba per order.
They currently have a crazy deal on thermoses, only ~$8 for a decent starter thermos. I think a Stanley might be better, but they are also more expensive. Amazon has a really good deal right now as the old branding of Stanley has been retired recently.
For Bombillas, I'd recommend starting with either a spoon or sunflower style. Again, GoYerbaMate has some really good deals on high quality Bombillas, so I'd buy 2 or 3 and find what you like. They are only like $8 a piece, wheras Amazon you would probably be spending ~$15 for similar quality.
For Mate, you should probably try and order 2 or 3 different styles. Playadito, Canarias, and Rosemonte Especial are all great starting points. The best thing about Yerba is that its so darn cheap (~$12 for a 2.2lb bag) that its pretty affordable to experiment.

Both the Stanley and the Thermos brand have models with bigger cups.
Since weight isn't an issue, the 1.4 qt. Stanley for $29 seems like it delivers the most bang for the buck. You could always take a wide-mouth insulted mug to pour your soup into, if you don't want to use the included cup. (The one I linked to is ten bucks, but you could probably find cheaper at a gas station, dollar store, etc.)
The nice thing about that setup is that you could take enough soup for two. :)
