The D6 Star Wars isn't entirely out of print, actually. Fantasy Flight/EDGE reprinted it in a nice slipcase for Star Wars' 40th anniversary (and the game's 30th anniversary).
The one to get is the original WEG D6 Star Wars Anniversary Edition. It's simple, plays fast and loose, and nails the feeling of Star Wars.
The FFG game (clearly) has a lot of fans, but I'm not one of them. The only advantage it has over the original (imo, obviously) is that it encompasses more of the up to date canon than the older game does.
However, it should be noted that the original game was so well done that Lucas Films sent new canon creators - including Timothy Zahn (who arguably started new canon in the 1990's before the new movies started coming out) - sets of the RPG books to study. In other words, the people who created what later became "extended universe" canon were required to know the materials in the RPG. It was that well done.
Fantasy Flight did a nice re-issue of the original. It's available from Amazon and I'm sure you can find it cheaper than there. Also, the WEG Star Wars source books are considered canon.
I recently looked around as well, personally owning the d20 Saga Edition and being not-too-fond of it, and found this. Which appears to be the d6 game that a few people itt have recommended? I was also aware of the Fantasy Flight Games edition but having been discontinued(?) the core rulebook on amazon is ~$90.
None of those are the simplest.
The original Star Wars RPG is simpler than any of them.
And Scum and Villainy is my favorite Star Wars game ever and is even simpler than that. It's also my favorite Firefly game ever.

I don't know much about DC, except that there is a Smallville RPG that also uses Cortex Plus, same as the most recent Marvel RPG.
If you want, you can also use a more "generic" superhero RPG. Mutants and Masterminds is well supported, will be familiar-ish to those that have played D&D before, and has a new simpler Basic Hero's Handbook to streamline character creation. Or you can check out our wiki entry on superhero RPGs.
The Streets of Mos Eisley is about the lightest one I know.

West End 30th Anniversary Edition is a close second and the original Star Wars RPG.
Pull yourself back. Look at Star Wars 1e from WEG. It's an amazingly light system before all of the cruft got piled on.

There's a Fate Core game called Bulldogs! that plays quite a bit like Han Solo: The Roleplaying Game, that's done quite a bit of the heavy lifting for you. You''d have to reskin the setting to fit exactly what you'd want tough, and maybe add your own mystic abilities if you want to model Jedi.
Personally, while I enjoy Bulldogs!, if I wanted to play in Star Wars - I'd use the old WEG D6 system. I favor first edition (due to its simplicity), but the second edition is plenty good too. The system is simple, plays fast, and models how the movies work better than any other IP-based game I've ever encountered. That game was lightening in a bottle.
