Do you see any reason why something like this would not work with my NUC8i5BEH in order for me to add a second m.2 NVME drive? I currently have a single 1 TB m.2 NVME SSD , that I would like to expand with a second 2TB m.2 SSD.

Use this or any other m.2 NVMe to SATA converter to install your m.2 NVMe SSD to an old computer.
You could always try something like this till you get your new motherboard, just don't expect it to hit its rated speeds until you get it installed into a proper NVMe port.

If youd rather get a new drive, I've seen some sales on amazon for sandisk drives quite often. I've also had good experience with samsung drives, but make sure you get an 850 or newer as older models have decay issues. Haven't used a whole lot of other ssd brands though so I cant help much.
The adapter you bough it almost entirely useless. It is for desktops and new motherboards will already have an m.2 slot.

Whatever you buy make sure it'll work with your SSD. I didn't make sure everything will work with your device.

But if you want to run an NVMe SSD through the U.2 port without paying insane prices for one, you could buy a U.2 to M.2 adapter:
As U.2 and M.2 are essentially the same, just in different form factors that would work. You could put any M.2 NVMe ssd in there.
