You need to specifically look for DisplayLink. Its a GPU built into a USB dongle essentially.

Your USB-C ports do not support native video out. For the most part, you will only find that on models supporting Thunderbolt, as video out is part of the Thunderbolt specifications; though some non-Thunderbolt USB C ports may support "Displayport alt mode" for video out.

Whatever you buy, make sure it doesn't say that it requires Thunderbolt, Displayport alt mode, media output, or something similar.

I am in the same boat. This is the GL65 that Walmart sold on Black Friday 2018. It has just the 1 HDMI port, a USB-C port that apparently doesn't do video, and some USB 3 ports. No MDP port.

It should work. I set a USB to VGA up for someone on their laptop ages ago and it worked surprisingly well.
That said, if this is a desktop you're probably better off putting in a video card. These things are mostly meant for laptops that don't have that option.
Everything that's needed is built in to it. You usually have to install the drivers first then connect it and away you go. Here's an example of one I've used a few times.
At least get something from a reputable brand and has good reviews. StarTech makes an excellent adapter. The one you linked has no reviews and costs $20. You get what you pay for.

I have and other people have but depends what you plan to do with it, also the maximum resolution limit for the card across all screens is 2x4K not 4x4K so it will disable the screens past 2x4K. I linked the specs below but the driver does enforce it so it's not a suggested limit but a hard limit, probably for that reason that driving 16K at once is a bit much for some cards to take
They also make 4K usb to HDMI adapters if you want a more powerful adapter driving it but if you just need a 1080p one they work fine.

They don't count against the monitor or max resolution limit of the card but are treated as a regular monitor in windows

There are USB to HDMI video adapters that you can buy. Get a good one, not a cheapie. You may need DisplayPort software installed for it to work.
Speaking of DisplayPort, DP 1.2 supports daisy chaining. You can look into that as a possibility if your rig supports it and you are not totally married to HDMI. See the article below from Dell.

There are also USB based video cards, different units have different maximum resolutions. You would not want to try this option at all for gaming, but for everything else it'd be just fine.

Something like that would be good, but if you need a higher resolution that 1080p you'll want to look at other options which may require a different cable than HDMI, so don't marry yourself to HDMI if your monitors have more than one connection available.

I looked for some docking stations but they don't really make modern ones as much. They're normally built for a specific model but i guess these took over the market instead because of how universal they are.
Yes, they work best with USB 3 ports, due to the faster transfer rate. They're essentially their own video cards though because the USB ports don't have a direct link to your GPU. What this means is web pages, videos etc... will work fine on whatever you hook it up to. Games, not so much
