I am sure there are a lot of great options but I use SteelSeries Arctis Pros. I wanted something I could alternate easily between consoles, phone, and a computer.

There are used ones here listed for a decent price.
People talk a lot of crap about arctis but i bought a pair and they actually are amazing.
mic is super clear and doesn't compress your voice at all (yknow the nasel sound) and they dont look too gamery for video calls. But keep in mind they only work wirelessly on pc or mac as they use a dongle to receive. This does mean there is like 0 latency tho

amazon has an open box sale today, with the Arctis Pro basically half off: https://www.amazon.com/SteelSeries-Arctis-GameDAC-Headset-playstation-4/dp/B079YBKTRN/ref=mp_s_a_1_6?dchild=1&m=A2L77EE7U53NWQ&qid=1632490751&rnid=16059675011&s=warehouse-deals&sr=1-6
Ah ha! I found the Arctis Pro Wireless and Wired. I don't care about wireless, so I'll just go wired. Should I bother with the digital to analogue converter (DAC)? It's another ~$70 USD.
I wonder where these stack up next to the Artic pros and MMX 300?
That's a whole $5 less than Amazon.
Amazon now has it for $216.31
I checked it in amazon, from what I read there is no 5.1 or 7.1 specified, but there is a table there, with "Surround Sound" and in the adjacent column " DTS Headphone:X v2.0". Link
