Sorry for taking eight days to respond to this--last week was wild and then right as it was letting up I just couldn't get myself to do anything for a day or two...
I think a lot of the more affordable plushes stopped getting made awhile ago--the two I own were total luck (one was regular price at Target like 5 years ago, and one was somehow a con plush of Lars that I lucked out in finding mid-2019 severely marked down (under $2, definitely not normal) in a ThinkGeek store ~~on my birthday, at that~~).
Regarding official products:
Books:
A lot of the plushies that are out there are either rare or marked up or both (or unofficial-looking and trying to play off discontinued plush prices). The McFarlane (LEGO-like) toy sets are marked up, at least on Amazon... yeesh. XP (This is the best cost-to-quality-ratio SU plush I could find on Amazon... it's near the price the Lars plush I bought would have been before discount... most other plush look to be bad quality or else they're marked up more than you may be willing to pay... I can't even find a toy that I'm too awful comfortable linking at those prices...)
eBay offers a few more affordable options (not much affordable Lion, unfortunately), but it's a grab bag at any given time you look, so... best advice I can give is search around as far as that one...
Etsy could have an unofficial something but that really really is the grab bag/consignment shop of the internet and often you have to wade through cheap/low quality stuff... there's high quality stuff there if you look around, but the higher the quality the more likely it is to be expensive because it's often a lot of work an individual has put in...
I may need to look around more to find better answers, since this was a lot of "yeah, things are expensive". DX
