Of course. Carbon steel knives will leave traces of iron behind, same as using a cast-iron pan will. Sometimes you can taste it, but usually you can't. It's iron, and its the same iron that comes in vitamin pills, it's actually good for you, and it is quite safe to eat.
If you put oil on the blade, you'll want to use mineral oil - it's available is a food safe grade, and a $6 bottle of it will last three lifetimes. It's odorless, colorless, tasteless, and you can literally drink the stuff:

It's also the same as most ordinary gun oils, too. Works great on guns, door hinges, fishing reels, and just about everything else.
My pleasure! And as for specific mineral oils... not really. Just make sure it's the food safe kind marketed as a laxative like I mentioned above, that way your knife will stay protected while still being fine to use for any food prep. I just use generic mineral oil from the hardware store. Stuff like this is more than sufficient!
Yup! I did a little research online and that’s all it is. I order all three items on Amazon and have them delivered every three months or so. Mineral oil, Vaseline, and paraffin wax.

Mineral oil is very generic stuff. So long as it is food grade, and does not have extra stuff added in, you're good to go.
