For nonstick, make sure it's anodized. For the best, get Swiss Diamond
We have a few Swiss Diamond nonstick pans. They're expensive, but allegedly they're good in the oven to 500F. We run them through the dishwasher after every use, as they're dishwasher safe. As our older Calphalon and T-Fal pans wear out, we're replacing them with Swiss Diamond pans.
I feel a little flush of happiness every time I use these pans. They're really nice.
The trick is to put cloths between them so the bottom of one doesn't rub on the non-stick surface of the larger one it's nested in. You can buy purpose-built cloths for that, but we just use facecloths. (You should do this for all your non-stick pans anyway.)
