Stir-fry. A simple recipe could be a bag of frozen vegetables and ground beef or chicken breast, season and oil to flavor. Since the flavor mainly comes from oils and seasoning, there are a million possibilities for your palate.
An example of a more complicated stir-fry is Pad Thai.
I suggest picking up an inexpensive wok like this one: http://www.amazon.com/T-fal-Specialty-Nonstick-Dishwasher-PFOA-Free/dp/B000MYI2ZO
Not only can you cook your whole meal in here and easily clean it out, but it's quick and simple to reheat (and add flavor to) leftovers. Because woks have such a thin wall, they heat up much faster than normal pots and pans. Get one with a lid if you have a few more bucks so that you can steam your food and trap in the moisture.
Buy a Wok. It's very versatile. You can do anything a pan does but better. Also, if you like easy stir-fry, it is a must.
