If you purchased a stand like this and a spare power cable for the TV, you could roll it into your bedroom when you wanted to use it and back out when you weren't using it

Instead of mounting the TV to the wall, how about mounting it on a mobile TV stand, like this one to allow you to raise it? Remove the castors and tuck the legs under the center unit (assuming it has a small gap like the side towers), remove the shelf above the TV for the bigger TV, raise it just enough to allow the center to be placed beneath the larger TV. Better pic to illustrate this, 4th picture down, but add a center.
For clarification, are you running 5.1 setup? If so, the surrounds go on the left/right side of the viewing area. For a 7.1 setup, you'll add rear speakers that are behind the viewing area. Dolby 5.1. Dolby 7.1
