There is a book " Cooking for Geeks" where the author explains cooking in a more scientific way. Another one is "The America's Test Kitchen Cooking School Cookbook: Everything You Need to Know to Become a Great Cook". I've recently bought this book. It's very thorough; they explain all cooking techniques, temperatures for cooking meat, spices, preparing food and buying ingredients. They also provide a lot of recipes for practice. As for courses, I couldn't find a good one for beginners, but I don't want to use recipes, I'd like to cook by methods. I've found many cooking shows/courses on Amazon Prime. Unfortunately, they're based on recipes, not cooking methods.
The only one I found useful are Thomas Keller's classes. He teaches cooking techniques and he's very detailed. I also took Gordon Ramsay's course, but most his recipes were too gourmet for me - it was difficult to find some ingredients or the ingredients were very expensive (fresh white truffles). I really recommend "The America's Test Kitchen Cooking School Cookbook: Everything You Need to Know to Become a Great Cook". I've just recently bought it on Amazon and learned a lot. There are also America's Test Kitchen's courses. I believe they have much more cooking content than MasterClass. I've never taken them, so I'm not sure about the quality.
