And, since you are familiar with "learning as you go," you will find fabric far more flexible with your mistakes. You can cut into, cut around, or cut off mistakes, and with either an insert or a hem, make a perfectly acceptable change or replacement to what you are creating.
Not to mention the flexibility of fabric itself!
There is a fabulous book that I cannot recomment highly enough to you with your background, called The Art of Manipulating Fabric by Colette Wolff.
I would suggest you start your journey small, and embellish clothing you already have, by first adding, and then replacing, and then constructing. You are heading down a rabbit hole of skill and delight like you would not believe!
By starting small, with collars, or cuffs, or decorative clothing panels (or the ubiquitous pot holders, decorative dolls and pillows), you will not be as overwhelmed as large projects can get, and will enjoy the fruits of your labor quickly.

"The Art of Manipulating Fabric" by Collette Wolff really changed how I looked at fabric, both in the beauty of design elements and in the way we move fabric to make 3-D shapes. I love fabric and it was great to see all the different ways you can move it to make designs. I ogled it for a long time and it built a lot of independence in my designing and drafting!
