Hi! I'm not GF, but I had a celiac stepdad and now I live in a house where I have to make GF food on a regular basis.
First of all, using substitutes is generally very unsatisfying, but there IS a lot of really delicious food that you can have! We have much better luck focusing on that!
Breakfast:
Mahnomin Porridge - This is my favorite thing to have for breakfast. I use half-and-half to cook it, and it serves five instead of four. Keeps for about a week in the fridge. 357 cal per serving.
Spoonbread - Sort of a corn/custard bread? 111 cal per serving, but I double it for breakfast.
Eggs and bacon are GF, too.
Lunch/Dinner:
Red lentil curry - A house favorite! This is ridiculously good. Go easy on the rice you make to go with it. Makes a LOT of food, so be warned.
Meat is GF, you just have to prepare it properly.
Smitten Kitchen is by far my favorite site for recipes. There's a lot of glutenous foods on there, but most of her savory dishes are naturally GF.
And I've been using this cookbook a lot, same as above.
