From a scholastic standpoint, I'd actually unironically recommend The Comic Book History of Wrestling by Aubrey Sitterson and Chris Moreno.
It's not really "watching all of wrestling", since, that would be incredibly difficult to source for huge portions of it, but I was shocked about how much that book covered, and how much I learned for it. You can tell they did their homework.
It might not be your style, but The Comic Book Story of Pro Wrestling might be a choice.
